The composition of the classic vinaigrette, in addition to the main products, often includes salted, pickled cucumbers or sauerkraut, which gives the salad a refined spiciness.

But what if you prepare a new salad based on a familiar dish, adding herring to the vinaigrette?

Vinaigrette with herring - general principles of preparation

The composition of vinaigrette with herring, as well as in the classic version, includes vegetables: beets, carrots, potatoes, onions. The vegetables are thoroughly washed, the onions are peeled and finely chopped, the root crops are boiled until cooked, cooled and chopped.

Also, some prefer not to boil vegetables, but bake in the oven, the taste of the salad is more saturated and aromatic.

Salted fish is taken with salted, whole or already prepared peeled in jars. If the herring is whole, it is cleaned, the skin is removed, the fins and tails are removed, the fillet is removed from the bones. Work should be very careful so that not a single bone is left. If there is no desire to bother with fish, then the finished fillet will be the perfect option for you.

Additional ingredients can be pickles, herbs, canned peas and even sausage, it all depends on your taste preferences.

Vinaigrette with herring is seasoned with either just olive or vegetable oil, or mayonnaise, sour cream, or a complex dressing. For example, mustard, lemon, vinegar, spicy.

Recipe 1. Vinaigrette with herring in mustard sauce

Ingredients:

• two beets;

• two carrots;

• two potatoes;

• two pickled cucumbers;

• 200 grams of slightly salted herring;

• two chicken yolks (raw);

• three tablespoons of balsamic vinegar;

• two tablespoons of mustard;

• a teaspoon of sugar;

• salt pepper;

• three tablespoons of broth (fish or vegetable);

• two tablespoons of butter (melted).

Cooking method:

1. Carefully wash the beets, carrots and potatoes, dry them. Without cleaning, wrap in foil, put on a wire rack in the oven. Bake for 30 minutes. Cool, peel, cut into small cubes. Spread in a large salad bowl.

2. We also chop pickled cucumbers and peeled herring. We spread both ingredients to vegetables.

3. In a small saucepan we make dressing: mix mustard with yolks, broth, vinegar and sugar. Add salt and ground pepper to taste. We set the pan to a quiet fire, heat it. Tomim, not allowing to boil, until thickened.

4. Pour vegetables and herring with a cooled dressing, mix.

Recipe 2. Royal vinaigrette with herring "Assorted"

Ingredients:

• 400 grams of herring fillet;

• two beets;

• two pickled cucumbers;

• one sweet and sour apple;

• two sausages;

• 180 g of blood beef sausage;

• 180 g of cooked doctor's sausage;

• a tablespoon of capers;

• 200 g sour cream;

• a tablespoon of mustard;

• 10 ml of vinegar;

• 50 ml of vegetable oil;

• dill, salt, ground pepper.

Cooking method:

1. We wash the beets and boil until cooked. Cool, peel, cut into cubes.

2. Cucumbers and all kinds of sausages are cut in the same cubes as beets.

3. We cut herring a little larger.

4. Spread all prepared foods in one large bowl.

5. Add chopped dill and finely chopped capers.

6. In another container, mix the vegetable oil with vinegar, mustard, sour cream, salt and pepper.

7. Dress vegetables, sausage and fish with sour cream sauce, mix.

8. Serve the salad chilled.

Recipe 3. Puff vinaigrette with herring and egg

Ingredients:

• two beets;

• five potato tubers;

• two carrots;

• two herrings;

• two to three pickles;

• two eggs;

• olive oil;

• salt pepper;

• feathers of green onions.

Cooking method:

1. Boil carrots, potatoes and beets until cooked. Separately, boil the eggs.

2. Separate the protein from the yolk, rub the yolk on a small segment of the grater, and the protein on the large. We cut boiled vegetables and cucumbers into small cubes.

3. Separate the herring fillet from the bones, cut into small cubes.

4. In a plate, mix olive oil with salt and pepper.

5. We spread the prepared ingredients in layers, repeating each layer 2-3 times: beets, herring, potatoes, carrots, cucumbers.

6. Sprinkle each layer of salad with a small amount of olive oil with spices, decorate the top of the salad with egg white, then with yolk and chopped green onions.

7. Remove the vinaigrette with herring in the refrigerator for an hour and a half, so that all layers are saturated with olive oil.

Recipe 4. Vinaigrette with herring and green peas

Ingredients:

• two beets;

• red onion;

• two potatoes;

• 200 grams of herring fillet;

• 120 g canned peas;

• green onions;

• spices;

• olive oil.

Cooking method:

1. Peel the boiled beets and potatoes and cut into small cubes.

2. Peel the onion and cut into the thinnest quarter of the rings.

3. Rinse the green onion and cut into rings.

4. We spread the vegetables in the salad bowl, add the green peas, spices and oil. Mix everything thoroughly.

5. We decorate the salad with diced herring.

6. Sprinkle everything with green onions.

Recipe 5. Light vinaigrette with herring without potatoes

Ingredients:

• two apples of sour variety;

• one large beet;

• Bell pepper;

• 250 g herring fillet;

• red onion;

• 250 g of green peas (canned);

• a teaspoon of mustard;

• lemon quarter juice;

• salt pepper;

• aromatic sunflower oil.

Cooking method:

1. Wash and dried beets, wrap in foil and bake until cooked.

2. Peeled onion, cut into small cubes, sprinkle with lemon juice.

3. Sweet pepper, peeled apples and cooled beets are cut into small cubes.

4. Cut the fish fillet into cubes.

5. Put everything in one bowl, season with oil mixed with salt, pepper and mustard.

Recipe 6. Recipe for vinaigrette with herring and apple

Ingredients:

• 200 g of herring (fillet only);

• beets;

• bell pepper;

• potatoes;

• carrot;

• two apples;

• onion;

• 200 g canned green peas;

• for refueling: mustard, vegetable oil, salt, pepper, chopped greens - the amount to taste.

Cooking method:

1. Rinse all vegetables, potatoes, beets and carrots, boil until fully cooked, then peel and cut into cubes.

2. Onion, bell pepper and apples cut in the same small cubes as boiled vegetables.

3. Cut herring into small cubes.

4. Mix in one container green peas, herring, all vegetables, an apple.

5. From the ingredients indicated in the recipe, we make a dressing, fill it with all the products in the container.

6. Mix well, stand for 15-20 minutes in the refrigerator before serving.

Herring vinaigrette - tips and tricks

• Before cooking or baking, be sure to rinse the vegetables thoroughly. Firstly, during heat treatment, dirt will not be eaten into the pulp of root crops. Secondly, it’s easier to wash pots.

• Cook beets separately from other vegetables, especially if it is large, because the cooking time for all vegetables is different. After boiling water, carrots and potatoes will be ready in 12-15 minutes, beets - in 20-25 minutes.

• If the salad contains canned peas, it is better to purchase this ingredient from a trusted manufacturer, or in glass containers. Often, yellow or crushed peas are hidden in a tin can, which, of course, will ruin the appearance of the salad and its taste.

• Cut onion for vinaigrette with herring very thinly, it should not interrupt the taste of other products. It is best to take not very bitter varieties of onions.

• It is also tasty if marinated onions before cooking. To do this, grind the vegetable, squeeze it lightly with your hands and sprinkle with lemon juice or pour vinegar mixed with ordinary water.

• To make eggs for salad easy to peel, add a pinch of soda at the time of cooking, and after ready dip them in cold water.

• Ground peas will add more flavor to the vinaigrette with herring than ordinary ground pepper from bags.

• Cut all the ingredients of the salad into cubes or cubes of the same size - the finished salad will look beautiful.

Often, a weighted herring that is sold is not quite what we would like it to be: salted, dry, too oily. Herring in the packaging happens with additives, and this is not necessary in the salad. Ingredients:

• kilogram of fresh-frozen herring;

• 200 grams of coarse salt;

• 100 grams of granulated sugar;

• allspice (10-12 peas);

• litere of water;

• three bay leaves.

Cooking method:

1. Pour water into a saucepan, bring to a boil, pour salt and sugar, add laurel and pepper. Boil over low heat for ten minutes, then cool.

2. Thaw herring, rinse it, clean the scales.

3. Put the whole fish in a container, fill it with brine.

4. Put in the refrigerator for three days.

After the time allotted for salting, the fish can be used to make vinaigrette with herring. Enjoy your meal.
