Today you can find a huge number of recipes for chicken coops, both traditional and simplified. But the most beloved pies are meat and potato pies, no matter what dough they are made from.

Kurnik with meat and potatoes - general principles of cooking

The traditional henhouse is a rounded loaf, inside of which a filling layered with pancakes. In our case, meat and potatoes are used for filling. The most fragrant and juicy pies are obtained if you use raw products. But there is a chance that they will be poorly baked. Therefore, more and more often you can find chickens with boiled or fried fillings.

Pancakes for henhouse are used ordinary, baked in a pan. Usually, more than 5-7 pancakes are not put in one loaf, as too many fillings are obtained, no matter how thin layers they are laid. A detailed assembly of a traditional henhouse is described below.

Recipe 1: Traditional chicken meat and potato pancake

A real recipe for a chicken with meat and potatoes. Prepared according to all the rules, with pancakes and yeast dough. You can cook them according to your recipes or use ours.

Ingredients

For the test:

• 200 ml of milk;

• 70 ml of water;

• 1 tsp yeast

• 1 tablespoon of sugar;

• flour;

• salt.

For pancakes:

• 1 egg;

• 200 ml of milk;

• 150 grams of flour;

• 2 tablespoons of oil;

• salt, sugar.

For filling:

• 6 spoons of sour cream;

• 400 grams of minced meat, better than fat;

• 300 grams of potatoes;

• 2 onions;

• pepper and salt to taste.

Cooking

1. Knead the yeast dough. Add hot water to the milk to make the mixture warm. Put the yeast, sugar, half the flour and let the mass rise, leave for a quarter of an hour. Then we report all the other components, knead the dough and leave it in a warm place for another hour.

2. Cooking pancakes. Mix the egg with milk, add sugar, salt, add flour and butter. We bake pancakes. It will turn out about seven pieces, four are enough for us.

3. For the filling, cut the peeled potatoes into thin plates.

4. Minced meat is fried in a pan, cool and mix with potatoes, add chopped onion, salt and pepper to them.

5. Take the dough, divide in half. We roll a cake, with a diameter of 6-7 centimeters more pancakes. Transfer to a greased baking sheet.

6. Put one pancake in the center, then a layer of potato filling, grease with sour cream.

7. Now again the pancake, filling and sour cream. Repeat 2 more times.

8. The remaining dough is rolled into a cake thinner than the previous one, in the center we make a hole at least 2 cm in diameter.

9. We cover our kurnik with the prepared cake, lay the lower edges up and press firmly. You can walk with a fork so that they do not stick out when baking.

10. Lubricate with an egg, send to cook in the oven for 50-60 minutes, temperature 175-180 degrees. It is important to bake potatoes, because only he is raw in the henhouse. Therefore, initially you need to cut very thinly.

Recipe 2: Kurnik with meat and potatoes from shortcrust pastry

A simplified version of the chicken with meat and potatoes without pancake layers. The dough is kneaded on margarine with sour cream. We use any meat, we make stuffing from raw products.

Ingredients

• 200 grams of margarine and sour cream;

• 2 yolks;

• 2 cups of flour;

• 1 tsp baking powder (you can take soda);

• sugar, salt.

For filling:

• 2 onions;

• 300 grams of meat;

• 3-4 potatoes;

• spices;

• 50 grams of plum oil.

One yolk for greasing the chicken.

Cooking

1. Pound the margarine with flour until crushed. Mix sour cream with yolks, a small spoonful of sugar and a pinch of salt, if we use soda, then we also add it here, it will go out by itself. If a cultivator, then mix with flour. We combine all the ingredients, knead the dough. We clean for half an hour in the refrigerator.

2. Finely chop the meat, sprinkle with spices, leave to marinate.

3. Also finely chop the onion, add to the meat.

4. Peel potatoes, cut into thin slices, you can immediately send to meat with onions.

5. We take out the dough and divide 1: 2.

6. We roll out the bulk of the layer, lay on the bottom of the form. It can be any: square, round, rectangular. The main thing is to form the sides.

7. Stuff the filling, put into shape. Rub a piece of butter on top.

8. Roll out the rest of the dough and cover the pie. The edges are firmly connected, you can make curly borders. From above we cut a hole for steam to escape, otherwise the cake will break.

9. Grease our kolnik with yolk and bake at 170 degrees for about 50 minutes.

Recipe 3: Kurnik with meat and potatoes from kefir dough

Another version of the chicken with meat and potatoes, this time half-open. A recipe feature is the use of a ready-made filling, that is, the products are not laid raw. Kefir dough with soda.

Ingredients

• 220 ml of kefir;

• 450 grams of flour;

• 70 grams of plums. oils;

• 2 eggs;

• salt;

• 1 tsp soda.

Filling:

• 3-4 potatoes;

• 300 grams of meat;

• 2 onions;

• salt, oil and pepper.

An egg or just a yolk for lubrication.

Cooking

1. Grind butter with 400 grams of flour, you may no longer need it, it all depends on the density of kefir. Add the egg and kefir, with slaked soda and dissolved salt. Knead the dough. If it is sticky, then add the rest of the flour. We clean in the refrigerator. Let it lie there while we make the filling.

2. Potatoes are simply boiled in their uniforms, but not digested. It must remain tight so that it can be carefully cut.

3. Cut the meat into strips and fry in oil, at the end we have half the onion rings, season with spices and fry for a couple of minutes.

4. Peel the boiled potatoes and cut them into cubes or slices.

5. We take out the dough and pluck a third. The rest lay out the inner surface of the form. We do not make borders above 2.5-3 centimeters.

6. Mix the meat with boiled potatoes, you can still add salt. Then we shift to the pie.

7. From the remaining dough we roll out a long ribbon, cut the bundles 1 centimeter wide. We lay it with a net, fasten the ends firmly with the sides.

8. Lubricate the cake and send for baking. Since the filling is ready, we focus on the test.

Recipe 4: Kurnik with meat and potatoes from puff pastry

Another lightweight version of the chicken with meat and potatoes, which goes puff pastry. Also, for the filling you will need 4 pancakes, which you can bake according to any recipe.

Ingredients

• 400 grams of puff pastry;

• 4 pancakes;

• 400 grams of minced meat;

• 150 grams of sour cream;

• 2 onions;

• 4 boiled potatoes;

• spices and oil;

• a little parsley.

Cooking

1. Puff pastry should be divided into 2 parts, rolled into koloboks, allowed to lie on the table for 20-30 minutes, then rolled into two flat cakes.

2. Peel the onions, cut into cubes and fry for a minute in a pan, then add the minced meat and fry for another 5-7 minutes, do not need longer, season with spices.

3. Dice the boiled potatoes, add parsley to it, which you need to chop finely, salt, pepper, put half the sour cream and mix.

4. In the cooled minced meat with onions, put the second part of sour cream, mix. You can also put greens.

5. We collect the pie. To do this, put a pancake on one cake, then a filling of potatoes, then again a pancake and meat filling. We repeat once again a pancake with potatoes, the last with meat.

6. Cover the henhouse with a second tortilla. Puff pastry is hard to stick together. Therefore, all the edges need to be greased with an egg, and then connected. With the same egg, coat the cake on top, make a few holes in the oven!

7. We bake until ready puff pastry and beautiful color.

Recipe 5: Kurnik with meat, potatoes and cheese

Cheese chicken - it's something! It is better for him to use hard cheese, with a processed product it turns out not so tasty.

Ingredients

For the test:

• 3-4 glasses of flour;

• 0.5 tsp. soda and salt;

• 300 ml sour cream;

• 250 g of oil drain.

Filling:

• 300 grams of meat;

• 200 grams of potatoes;

• spices;

• 250 grams of cheese;

• 2 onions;

• 3 eggs.

Cooking

1. Knead the dough. To do this, we extinguish soda in sour cream, put the salt and mix with softened, possibly slightly flooded oil. Pour the uku and make a cool dough. Cool.

2. For the filling, boil potatoes and meat, then cool and cut into any slices that you like. Chop and fry the onion.

3. Roll out 2 round cakes, put the first into shape.

4. Now in layers: potatoes, fried onions, meat, cheese. Season each layer with spices. Break eggs on top. But not in a heap, we try to spread them evenly over the filling.

5. Cover the cake with the remaining cake, connect the edges. Lubricate with an egg.

6. We send for half an hour to the oven and you're done!

Recipe 6: Puff pastry with meat, potatoes and mushrooms

Another version of the classic chicken cooked on a yeast dough with pancakes. How to knead the dough for the pie and pancakes, you can see in the second recipe.

Ingredients for Topping

• 300 grams of meat;

• 3 onions;

• 4 potatoes;

• 150 grams of sour cream;

• 300 grams of champignons;

• butter and spices.

Cooking

1. Boil potatoes, cut into cubes, salt, pepper and set aside.

2. Cut the meat into cubes or straws, fry, stew or boil. Then cool, set aside as well.

3. Separately, fry the mushrooms, diced. Cool down.

4. Cut three onions, fry until transparent and divide into three parts. We send one to mushrooms, the second to meat, and the third to potatoes.

5. We also share the sour cream and put it into three toppings. If the meat is fat, then you can add less or not put it at all.

6. We collect the kurnik. We roll two cakes according to the classical scheme. Transfer one to a baking sheet.

7. Lay the layers: pancake, meat, pancake, potatoes, pancake, mushrooms.

8. Cover with a second yeast dough cake and you're done! It remains to pinch the edges, grease the chicken and bake. It does not take long to prepare; it is enough to brown.

Recipe 7: Lazy Chicken Meat and Potato

Lazier than the kurnik just can’t come up with. You don't even need a rolling pin to cook it!

Ingredients

• 3 eggs;

• 1 cup mayonnaise;

• 1 glass of water;

• salt;

• bag of a cultivator;

• 15 tablespoons of flour.

To the filling:

• 2 boiled potatoes;

• 200 grams of boiled meat;

• 1 onion;

• spices;

• sesame seeds.

Cooking

1. Mix the eggs with water and mayonnaise, salt, put the ripper with flour and beat the mass thoroughly with a mixer.

2. For the filling, chop the meat finely, onion as well, just rub the potatoes on a coarse grater. All salt, pepper.

3. Pour half the dough into a greased form, put the filling and the rest of the dough.

4. Generously sprinkle the chicken sesame seeds in the oven! It will take about 30 minutes to prepare.

Kurnik with meat and potatoes - useful tips and tricks

• Lean meat chicken dishes are not very tasty, so you can add lard, butter, various fats to the filling. You can grease the filling with fat sour cream or cream on top.

• Kurnik - royal loaf. And you can decorate it accordingly. If there are pieces of dough, then you can put flagella, fashioned leaves and flowers on top of the pie. And so that they firmly "sat down" and do not fall off during baking, the landing site must be greased with an egg.

• Onions and potatoes are cooked for a long time and most often they are not baked, they remain crispy. To prevent this, you can lightly fry them in a pan, but do not bring to full readiness.
