Stuffed meatballs in the oven - the basic principles of cooking

Many, even experienced housewives, do not know how to cook cutlets in the oven. Such cutlets are not fatty, but very juicy. When baking in the oven, they are covered with a delicious crust and baked evenly from all sides.

Grind the meat in a meat grinder or buy ready-made minced meat. To make the patties soft, they add a loaf soaked in milk. Juice will be served with chopped onion and some potatoes.

Crushed garlic, spices and herbs are placed in the minced meat. Add eggs and knead well with hands.

Cutlets are formed from minced meat and breaded in flour or breadcrumbs. They can be pre-fried in a pan or immediately spread on a baking sheet. Cutlets are baked at a temperature of 200ºС for about a quarter of an hour.

To diversify the dish, vegetables chopped in a meat grinder are added to the minced meat patties in the oven. You can also make a cake, put a piece of cheese or butter in the center and form a patty.

Remember that when cooking in the oven, the juiciness and roastiness of the patties can be adjusted using the cooking time and temperature.

Recipe 1. Oven minced meatballs in the oven

Ingredients

turkey or chicken mince - 600 g;

salt;

100 ml cream;

spices;

bulb;

sunflower oil;

egg;

breadcrumbs;

Dutch cheese - 100 g;

three slices of white rolls.

Cooking method

1. Cut the crust from the roll. Pour the pulp with cream and leave for a quarter of an hour to soften it. Peel the onion, wash and chop in a blender.

2. Put the minced meat in a deep bowl, drive an egg into it and add the onion. Squeeze out the softened bun and put it in the stuffing. Season it with spices and salt. Knead thoroughly with your hands until smooth.

3. Pour breadcrumbs into a flat dish. From the minced meat we form small cutlets and roll them in breadcrumbs.

4. Lightly grease the baking sheet with sunflower oil and put the patties on it. Grind the cheese on a coarse grater. We spread some cheese on each cutlet. We send the baking sheet to the oven preheated to 180 ° C and bake for half an hour. We serve minced meat patties in the oven with a side dish of potatoes or pasta.

Recipe 2. Minced meat patties in the oven with quail eggs

Ingredients

minced pork and beef - 500 g;

sunflower oil;

two potatoes;

breadcrumbs;

carrot;

ground black pepper and peas;

bulb;

salt;

clove of garlic;

quail eggs - 12 pcs.;

two slices of a white loaf;

egg;

milk - 50 ml.

Cooking method

1. Put the quail eggs in slightly salted water and boil until cooked. Cool them under a stream of cold water and peel.

2. Cut the crust from the loaf. Pour the pulp with milk and leave to soak. Peel potatoes and carrots and wash. Grind vegetables on a grater with small holes. Free the onion and garlic clove and chop finely with a sharp knife. Drive the egg into a small bowl, salt, pepper and grind well. Add all ingredients to the minced meat and mix thoroughly, gently beating.

3. Moisten hands with boiled water. Take some minced meat and knead it into a cake. Put a boiled quail egg in the center and form a cutlet.

Ingredients

a pound of chicken breast;

25 ml of vegetable oil;

200 g of white bread;

2 cloves of garlic;

half a glass of milk;

half a glass of breadcrumbs;

a pinch of black pepper;

120 g butter;

a pinch of sea salt.

Cooking method

1. Cut white crusts with white bread. We warm the milk to a warm state and fill it with bread. Leave for a while to make the bread soft.

2. Peel the garlic from the peel and crush it through a garlic squeezer.

3. We wash the chicken breasts, slightly dry them with napkins and cut them into pieces.

4. Grind the meat in a meat grinder with pressed bread. Add garlic, salt, pepper and knead well.

5. Cut the cheese into small cubes. Turn on the oven at 180ºС.

50 g of flour;

50 g mayonnaise;

30 g of tomato paste.

Cooking method

1. Salt the minced pork, pepper, beat the eggs into it and knead well, gently beating, until smooth. Dampen your hands with water and form a minced meat patty. Put them in a preheated frying pan with vegetable oil and fry on both sides. Just to make the cutlets grab a little.

2. Mix mustard in a deep cup with mayonnaise. Add crushed garlic and tomato paste to them. Mix well until smooth.

3. Peel onions and carrots, wash and cut into half rings. Rinse the tomatoes, wipe with a napkin and chop them in slices.

4. Lubricate the baking dish with butter, put the onions on the bottom, lay the halves of carrots and slices of tomatoes on top of it. Put the fried cutlets on a vegetable pillow and pour the sauce over everything.

Ingredients

600 g of ground turkey meat;

fresh greens;

100 g of white bread;

70 ml of sunflower oil;

100 ml of milk;

a pinch of ground black pepper;

200 g of onions;

two pinches of salt;

three cloves of garlic;

two tablespoons of sesame;

two eggs;

200 g of cheese;

300 g of tomatoes.

Cooking method

1. We transfer the minced meat from the turkey to the blender's container. Here we break the eggs. We clean and wash the onion. Cut it into slices and put it into the minced meat. Remove the husks from the garlic cloves and add to the bowl. Separate the crumb of bread from the crust and soak it in milk for ten minutes. Then squeeze it and put it in the stuffing. Add fresh herbs, salt, pepper and interrupt everything until smooth.

2. We form cutlets from minced meat. Pour sesame into a flat dish and roll each cutlet in it. We spread them in a pan with preheated vegetable oil and fry until brown on both sides.

Ingredients

500 g of mixed meat;

two tomatoes;

30 ml of sunflower oil;

3 cloves of garlic;

half a bunch of dill and parsley;

a slice of stale white bread.

Cooking method

1. Peel the garlic cloves and onion from the husk. Soak a slice of bread in milk for ten minutes and squeeze.

2. Finely chop the onion and washed greens. Squeeze the garlic through a garlic squeezer. Rinse the tomatoes, wipe with a paper towel and cut into small cubes. Also chop the cheese. Transfer all prepared foods to minced meat. Season with salt and pepper and mix well.

Ingredients

300 g of beef and pork;

four tbsp. tablespoons of flour;

egg;

a pinch of ground pepper;

bulb;

three pinches of salt;

four cloves of garlic;

a third of a glass of drinking water;

150 g of cheese;

50 ml of vegetable oil;

100 g of white bread.

Cooking method

1. Turn on the oven at 190ºС. Peel and rinse the garlic cloves and onion. Wash pork and beef, wipe with napkins and cut into pieces. Soak white bread in water and leave for a quarter of an hour.

2. We pass the meat, pressed white bread, garlic and onions through a meat grinder. We rub the cheese on a large segment of the grater.

3. Add the cheese chips and egg to the minced meat. Salt, season with pepper, knead well and beat lightly.

4. Pour the flour into a plate. With wet hands we take a little mincemeat and form cutlets from it. Blend them in flour and put in a greased form.

5. We send the patties to the middle level of the oven and bake for about 20 minutes. We take out the form, turn the patties over, pour a third of a glass of boiled water into the form and put in the oven for another ten minutes. Serve cutlets with any side dish or fresh vegetables.

Stuffed meatballs in the oven - cooking tips and tricks

  • It is advisable to add only yolk to cutlets, since protein gives them some rigidity.

  • To make the patties very juicy, add a little boiling water to it.

  • Before adding finely chopped onions to the minced meat, crush it in a mortar to make more juice stand out.

  • Minced beef is quite dry. To prevent the cutlets from being too dense, add a little fat to it.
