For the preparation of any dish, there are certain technological methods. But when it comes to a whole set of recipes for a dessert table, which must be prepared in haste, it’s more correct to talk about general recommendations that will be useful in preparing a dessert.

As already mentioned, it is necessary that there is always a set of ingredients from which you can cook not just one, but several different desserts (meaning a variety of recipes, not quantity). Butter, milk, eggs, fruits, sour cream or yogurt - a standard set of products that are in the refrigerator. Most often, these ingredients are the basis of any dessert.

Look in the cabinet where flour, sugar and other groceries are stored. Group them on one shelf so that they are always in sight - if necessary, you won’t have to look for them for a long time. It is important that the idea appears as soon as one's eyes fall on one of the ingredients, because it does not take so much time the direct process of preparing a quick dessert, like the flour of creativity and the constant question of housewives, what to cook in haste? When the ingredients are all together in sight, ideas come much faster.

A jar of honey, a couple of cans of condensed milk, and chocolate will come in handy. These products have a fairly long shelf life, which is very beneficial for an emergency supply. Every housewife has vanilla, cinnamon, and other aromatic spices, often used to make desserts. It’s good to have dessert wine, cognac or rum in stock - they will also decorate many sweet dishes, both as ingredients and as a complement: on the basis of alcoholic beverages, you can very quickly prepare dessert liqueurs, punch, mulled wine, cocktails. 1. Dessert in a hurry: chocolate sausage - a sweet memory of childhood

Ingredients:

Condensed milk 300 g

Nutella 240 g

Shortbread Cookies 200 g

Chocolate 250 g

Butter 100 g

Vanillin 10 g

Pistachios (or any nuts) 120 g

Cooking method:

Cover a small but deep rectangular or square shape with baking paper (or foil), grease with oil. In a saucepan, combine the condensed milk, pieces of chocolate, butter, vanilla, plain salt and Nutella. Put the mixture in a water bath, warm until the chocolate melts. Quickly add pieces of cookies and pistachios. Put the mixture in the form, smooth the surface. Put in the refrigerator until it hardens for about an hour. You can form a dessert in the form of sausages by wrapping the mixture in a cling film.

If you wish, add a touch of variety by adding pieces of dried fruit and raisins to dessert.

2. Dessert per minute - banana cream cake

Ingredients:

Biscuit cookie 0.5 kg

Bananas 800 g

Whipped cream 300 g

Chocolate Chip 50 g

Dessert wine, white (or liquor) 150 ml

Cooking:

Put the cookies in one layer on a flat round dish, sprinkle it with wine or liquor. On top of the cookies, lay a layer of bananas, sliced ​​in circles, 0.5-0.7 cm thick. Cover the bananas with cream and chop with chocolate chips. Repeat this operation. Cover the top of the cake with cream, squeezing them out of the pastry bag through the curly nozzle. Sprinkle with chocolate.

The cake is ready, but it’s better to put it in the refrigerator for a while to insist. You can use fresh strawberries or any fruit combination to taste.

3. Desserts whipped up - chocolate mousse

Ingredients:

Sugar 50 g

Water 75 ml

Cream (33%) 250 ml

Chocolate Liqueur 100 ml

Yolks 3 pcs.

Roasted Almonds 80 g (Chips or Flakes)

Cooking:

Combine sugar and water in a small saucepan, and bring to a boil, boil for three minutes. Whip the cream to steady peaks. Add the chocolate liquor. It can be replaced with melted chocolate with the addition of rum essence. Continue whipping, gradually pouring hot syrup and beaten yolks.

Pour the mousse into a mulled wine glass or tumbler, sprinkle with almond crumbs, and refrigerate.

4. Whip up desserts - chocolate-free strawberry cheesecake without baking

A cake according to this recipe is prepared quickly, but it is better to make it in the evening, so that it can freeze overnight, since it contains a cream souffle.

Ingredients:

Shortbread Cookies 250 g

Cheese "Philadelphia" 300 g

Cream, confectionery 350 ml + 50 ml (for ganache)

Gelatin 20 g

Milk (for dissolving gelatin) 70 ml

Dark chocolate 150 g

Oil 40 g (for glaze)

Cognac or rum 30 ml (for glaze)

Strawberries, fresh or frozen 400 g

Icing sugar 120 g

Vanillin - to taste

Cooking:

Warm the cream without boiling, and dissolve the chocolate in them.

Transfer the prepared strawberries to a blender, add powdered sugar (1/2 part), and chop to a puree mass.

Soak gelatin first in warm water and then dissolve in milk.

Whip the cream with the rest of the powder, add strawberry puree and dissolved gelatin to them. Stir the resulting mass.

Cover the bottom of the mold with a film so that its edges hang over the rim. It is advisable to choose a detachable or silicone mold so that it is easy to remove the cake from it. Lubricate the film inside with oil, lay out the third part of the cream. On the cream, put the cookies in one layer, then spread the cream (half the remaining mass). Again - cookies, cream. The last layer is cookies.

Cover the cake with a film and put in the refrigerator overnight. In the morning, unfold and transfer to a dish, turning the form upside down.

Remove the form. Prepare the glaze: melt the chocolate and butter, add cognac to the mass to give the glaze aroma and shine. Whisk with a whisk. When the chocolate cools down to 25-30 ° C, pour them the surface of the cake, starting from the center, so that it flows down the edges.

Ingredients:

Gelatin 15 g

Natural yogurt 400 g

Vanilla powder or extract to taste

Cream (35%) 200 ml

Icing sugar 30 g

Fresh berries 300 g

Orange juice 150 ml + 20 g gelatin (for decoration)

Cooking method:

Cover the bottom of the detachable shape with baking paper, oiled. Put a biscuit or cookies in it - in one layer.

Wet the gelatin by pouring it with warm boiled water. It must be completely dissolved.

Beat yogurt with icing sugar and add vanilla. You can further decorate the taste of yogurt with citrus peel. Combine with gelatin. Make sure that there are no undissolved lumps. To do this, pour the gelatin into the yogurt through a strainer.

Whip the chilled cream, adding the second part of the powder, and combine them with yogurt.

On the biscuit layer, lay out half the berries, after sorting them out first. Raspberries, blackberries, currants, blueberries are suitable. You can use berries in stock.

Pour the yogurt and cream mousse onto the berries. Make jelly from orange juice. Put the cake mold in the refrigerator for an hour. As soon as the mousse hardens slightly, lay out the remaining berries and fill them with orange jelly. Put the cake back in the refrigerator until it solidifies.

Prepare a rectangular shape: cover it with paper, film or foil, oiled.

Slices of marmalade and marshmallows, chopped nuts, dried fruits in a bowl, and pour the mixture with melted white chocolate. Mix the mass well and shift into a mold, smooth the surface. Put the mold in the refrigerator for at least an hour. When the dessert hardens, cut into slices of any shape and size. To cut was smooth and beautiful, dip a sharp knife in boiling water.

Whip up desserts - tips and tricks

In order to always have at hand the necessary supply of ingredients, which are mainly used only for the preparation of desserts, they must be stored correctly, trying to avoid spoiling food and unjustified expenses. Therefore, remember:

Many confectionery products contain fats that are better stored in a cool place, and careful packaging will protect them from unnecessary moisture, and the vanilla flavor will remain better because fats quickly absorb ambient odors.

Keep dried fruits and berries in the refrigerator, and dried berries and candied fruits in a dark glass bowl, carefully corking it. Before putting products in glass containers, carefully check them, the jars should be sterile and dry. It is also necessary to carefully cork flour, starch and other grocery products for storage.
