Liver cake - the basic principles of preparation

Many housewives hesitate to cook a liver cake, believing that it is long and troublesome. Yes, you’ll have to tinker, but in fact, everything is not as scary as it seems.

Pancakes for the cake are made from chicken, beef or pork liver. It is better, of course, to use chicken offal, as the liver of the bird cooks faster and has a delicate taste. The liver is washed, remove all excess and pass through a meat grinder. In the resulting base for the test put eggs, sour cream and flour. To prevent pancakes from turning out rubber, lay eggs at the rate of one piece per 200 g of offal.

Pancakes are baked from the test, trying not to be too thick.

When all the pancakes are ready, begin to prepare the filling. To do this, peel and finely chop the onions. Peeled carrots are passed through large grater holes. Then the vegetables are fried until soft and cooled.

Mayonnaise or sour cream is used for the sauce. Garlic is squeezed into it through a press and mixed.

Then put a pancake on a flat dish, grease it with mayonnaise-garlic sauce and lay out the vegetable filling. Cover with the next pancake and repeat the layers. So collect the cake until the pancakes and filling are over.

For decoration, you can use vegetables, eggs or corn.

In the layer, you can use slices of fresh tomato or green onions.

Ingredients

beef liver - 400 g;

150 g mayonnaise;

three eggs;

fresh greens;

200 ml of milk;

50 ml of sunflower oil;

100 g of flour;

two onions;

sea ​​salt;

two carrots;

a pinch of ground allspice.

Cooking method

1. We wash the liver under the tap, cut the film and cut into small pieces. Pass the offal through a meat grinder or grind in a blender.

2. In the liver mixture, add eggs, salt, pepper and, gradually pouring flour, knead the dough without the juices. Now pour the milk and shake well with a whisk.

3. Pour a little oil into the preheated pan. Take a little dough with a ladle and pour into a pan. Quickly distribute it on the bottom and bake a pancake on both sides, two minutes on each. Ready pancakes are cooled.

4. Peel and finely chop the onion. Three peeled and washed carrots. We pass the vegetables in sunflower oil until soft.

5. Put the pancake on a flat dish, grease it with mayonnaise and spread the fried vegetables. Cover with a second pancake and repeat the procedure. Thus, we collect the whole cake. We decorate it with chopped herbs and leave it to soak for an hour.

Ingredients

chicken liver - 600 g;

salt;

three raw eggs;

parsley greens;

three boiled eggs for decoration;

two large onions;

garlic - three cloves;

two large carrots;

flour - 80 g;

small boiled carrots;

refined vegetable oil - 50 ml;

mayonnaise - 300 g;

20% sour cream - 100 ml.

Cooking method

1. We thoroughly wash the chicken liver and clean it from the gall bladders (if any) and films. Cut the offal into small pieces and place it in a bowl. Add eggs, fat sour cream and flour. Grind everything with a submersible blender until smooth. Salt and mix.

2. Heat a little oil in a pan. We pick up a little dough with a ladle, pour it into a pan and distribute it over the entire surface, turning from side to side.

3. Pancakes fry over moderate heat. As soon as the pancake begins to lag behind the walls, turn it over with a spatula and continue to fry until golden brown.

Ingredients

a pound of chicken liver;

black pepper;

four eggs;

salt;

white onion head;

200 g mayonnaise;

100 g of flour;

150 ml of milk;

two tomatoes;

two quail eggs;

greenery;

black olives.

Cooking method

1. Wash the liver, remove any excess and grind it through a meat grinder or in a blender. Add the egg and flour to the resulting mixture, mix so that not a single lump remains. Pour a couple of tablespoons of milk and shake with a whisk. Season with pepper and salt.

2. Heat a frying pan with a small amount of oil. Spread the liver mass with a spoon and evenly distribute it along the bottom. Cover and fry for about three minutes. Then gently turn over and fry for the same amount of time.

Ingredients

400 g of pork liver;

Cooking method

1. Washed and cleaned of all unnecessary liver pass through a meat grinder. We clean the onion. Finely crumble half and add to the liver mixture. We drive eggs here, salt, pepper and, gradually adding flour, beat everything well with a whisk.

Beef liver is recommended to soak for two hours in milk to get rid of bitterness.

Mayonnaise can be replaced with fat sour cream.

You can sprinkle the top of the cake and sides with crumbs of rye crackers.

Flour can be replaced with bran or starch.

The filling will turn out tastier if you add fried mushrooms to it.
