The recipe for the famous coconut milk soup, which is prepared not only in Thailand. The dish is cooked in chicken broth with shrimp and mushrooms. Despite the interesting combination, it turns out very tasty.

Ingredients

• 1 breast fillet;

• 400 ml of coconut milk;

• 2 onion heads;

• 1 carrot;

• 150 g of mushrooms (champignons);

• 1 pod of chili;

• 0.5 lemon or lime;

• a piece of ginger;

• 100 g of shrimp;

• parsley, can cilantro.

Cooking

1. Fillet should be washed, cut into small pieces up to two centimeters.

2. Cut the carrots into strips, mushrooms with slices, onions in small cubes. Ginger needs to be rubbed. It will take 2 teaspoons. Chop the chili pepper finely.

3. Pour the chicken with water, approximately 1.2 liters, bring to a boil. Remove the foam.

4. Now add the onions and carrots, let it boil again.

5. It's time to add mushrooms.

6. Next you can add the soup.

7. Now toss ginger, chili pepper. Cook the soup on low heat for a quarter of an hour.

8. During this time, squeeze the juice from the lime. You can use lemon. Remove the zest, grind. We chop greens.

9. We also clean the shrimp. According to the recipe is 100 g of already prepared product.

10. Pour coconut milk, let it boil.

11. Add citrus juice with zest to the pan, throw shrimp.

12. Boil the soup for another minute, season with herbs, cover and turn off. We insist 10 minutes before serving.

Coconut and Pumpkin Soup

The recipe for a very bright soup with coconut milk. In addition to pumpkin, curry seasoning and fresh ginger root will be needed, the number of seasonings can be reduced to your taste.

Ingredients

• 800 g pumpkin;

• 100 g carrots;

• 100 g of onion;

• 50 g of oil;

• 300 ml of coconut milk;

• 20 g of ginger;

• 0.5 tsp curry;

• salt pepper.

Cooking

1. Use a pan with a thick bottom in which you can fry vegetables. Put oil in a bowl, put on fire.

2. Cut the onions and carrots, alternately toss the fry at intervals of a minute.

3. While the vegetables are browning, you need to do pumpkin. Peel, cut into cubes, remove all unnecessary. Put in a saucepan.

4. Add grated ginger root.

5. Add 300 ml of hot water or any broth, cover and simmer mine twenty.

6. Remove the saucepan from the heat, open and let the boiled pumpkin and vegetables cool slightly.

7. Puree the soup with a blender or just carefully knead the pieces.

8. Put it back on the stove.

9. Add coconut milk, salt, season with pepper and curry.

Soup with Coconut Milk and Tom Ka Chicken

• 300 ml of coconut milk;

• 2 tablespoons of fish sauce;

Cooking

1. Rinse chicken breast, cut into strips, toss in a saucepan with boiling liter of water. Boil a couple of minutes after boiling. It is advisable to remove the foam that will appear on top.

2. Cut the mushrooms, toss to the chicken.

3. Next add chopped onions.

4. After a couple of minutes, add the chopped tomatoes, cover the pan and cook for 12 minutes.

5. Dilute the fish sauce in coconut milk, add to the soup.

6. Immediately lay spices, chopped garlic, salt.

7. After two minutes, add lemon juice, turn off. Greens can be added to the pan or served separately.

Coconut Milk Soup with Shrimp and Rice Noodles

A variation of a hearty soup that adds rice noodles. Shrimps are best used small, the recipe indicates the amount of purified product.

Ingredients

• 500 ml of coconut milk;

• 100 g of rice noodles;

• 1 tsp starch;

• 500 g peeled shrimp;

• 1 pinch of chili pepper;

• 3 carrots;

• 2 cloves of garlic;

• 0.5 tsp grated ginger;

• lime, green onions, salt and olive oil.

Cooking

1. Cut the peeled carrots into thin slices, chop the garlic, squeeze the juice from the lime.

2. Heat olive oil in a saucepan, put chopped ginger, add garlic and chili pepper, fry for a few seconds.

3. Add the carrots, fry for a couple of minutes.

4. Pour coconut milk and 800 ml of hot water into the soup. Cover, cook for ten minutes.

5. Open, add salt, put rice noodles, cook another three minutes.

6. Mix the starch with 100 ml of water, send it to the soup.

7. Spread peeled shrimp.

8. After two minutes, try the salt, if necessary add more. Pour lime juice, throw chopped onion and turn it off.

9. Let the soup stand on a warm stove for several minutes to reveal the tastes of the ingredients added at the end.

Coconut milk and lentil soup

A simple option in the preparation of the soup, but quite hearty and tasty. Lentils can be used for it any. Preserved tomatoes are added canned.

Ingredients

• 200 g of tomatoes;

• 200 g lentils;

• 200 ml of coconut milk;

• 2 cloves of garlic;

• 1 onion head;

• 2 tablespoons drain oil .;

• 800 ml of broth;

• salt, hot pepper.

Cooking

1. Rinse the lentils, place them in a boiling broth, and cook the readiness dot. On average, about half an hour, but it all depends on the variety, sometimes it takes a little more or less time.

2. In butter, fry the garlic, cut into several parts. Remove the pieces.

3. Add the chopped onion to the garlic oil, sauté until golden brown.

4. It's time to add canned tomatoes to the pan. Remove the skin, cut the tomatoes.

5. Cook onions with tomatoes for about five minutes, turn off.

6. Transfer the sautéed vegetables to the cooked lentils, add coconut milk.

7. Salt, cover and cook coconut soup for a couple of minutes.

8. Add herbs, hot pepper and lemon juice to taste.

Spicy Citrus Soup with Coconut Milk

A spicy first course option. Despite the name, very little orange is added. The basis of the dish is carrots with canned beans.

Ingredients

• 400 g carrots;

• 2 onions;

• 400 g canned beans;

• 1 orange;

• 1 tsp ground chili;

• 1 liter of broth, water;

• 200 ml of coconut milk;

• 2 tablespoons of oil;

• salt, greens;

• 2 cm ginger root.

Cooking

1. Cut the onions and carrots with any slices, but not thickly. Fry in a saucepan with a couple of tablespoons of butter.

2. Add broth or just hot water.

3. Immediately add hot pepper and a piece of ginger, chopped finely or grated. You can reduce the amount of spicy ingredients or so far lay only a portion, and later add to taste.

4. Squeeze the juice from the orange into the pan, the zest can also be added. Boil the soup until soft carrots. Remove from heat.

5. Let the dish cool slightly, then puree. Bring back to the fire.

6. Salt, add canned beans, pour coconut milk, boil for a minute.

7. Season the citrus soup with herbs when serving.

Coconut Milk Sweet Soup

A variant of a coconut-based sweet soup. Wonderful breakfast, afternoon snack or just that. Dried fruits can be added any, it is optional to use only dried apricots and raisins.

Ingredients

• 400 ml of coconut milk;

• 100 g of rice;

• 400 ml of water;

• 50 g of raisins;

• 50 g dried apricots;

• 1 tablespoon of nuts;

• 1 tablespoon of coconut flakes;

• 2 tablespoons of sugar or honey;

• salt.

Cooking

1. Put water on the stove, salt.

2. While the liquid is boiling, sort and rinse the rice, transfer to a saucepan and simmer over low heat until almost done. Grains should not be boiled.

3. Add coconut milk to the saucepan.

4. Rinse dried fruits, cut dried apricots into cubes or straws, you can simply cut into four parts. Add to pan.

5. Boil the soup for another three minutes, add sugar or honey to taste. Turn it off.

6. Pour the sweet dish into the plates, add the fried nuts, coconut.

Coconut Milk Soup - Tips & Tricks

• Thai soups with coconut milk are spicy and aromatic. But it is not necessary to lay all the ingredients on the list. If you do not like spicy dishes or do not tolerate any component, then you can simply exclude it or reduce the amount.

• When serving coconut soup, greens can be added directly to the plate, like lemon juice. You can serve these products in separate dishes and put to taste.
