Minced meat roll with mushrooms in the oven - the basic principles of cooking

The taste of the dish mainly depends on the quality of minced meat. Of course, you can buy a finished product, but it is better to make it yourself from fresh meat. It can be pork, beef or chicken. To make the minced meat homogeneous, it is passed at least twice through a meat grinder with a fine grill. For juiciness, add onion or lard to it. Herbs and spices will make it fragrant. Minced meat for roll should keep its shape well, therefore, as a binder, eggs, starch or flour are added to it. Minced meat is thoroughly kneaded with hands, gently beating it on a bowl.

The filling is prepared from mushrooms, onions and other vegetables. Mushrooms can be any: oyster mushrooms, champignons, white or other forest. The product is cleaned and washed from sand and dirt. Cut into slices and fry with onion in hot oil until light brown. The filling can be varied by adding cabbage, potatoes, cheese or boiled eggs.

Stuffing is laid out on plastic wrap with an even layer of the same thickness. Mushroom filling is spread on it and wrapped in minced meat using a film in the form of a roll.

Bake meatloaf at 180 degrees for about half an hour. Serve the dish, cut into portions.

Recipe 1. Minced meat roll with mushrooms in the oven

Ingredients

bulb;

Russian cheese - 100 g;

champignons - 120 g;

one egg;

sunflower oil - 20 ml;

a pound of minced meat;

two sprigs of parsley;

common salt and ground pepper.

Cooking method

Cut the peeled onion into small pieces. Put the onions in a pan and lightly fry in oil. Rinse the mushrooms, dry and crush with quarters. Add to the onion and simmer until the mushrooms are browned. Pepper and salt. Pour the chopped greens and remove from the stove.

Salt the minced meat, pepper and beat the egg. Knead well. Put the stuffing on a foil sheet and form a rectangle from it no thicker than a centimeter.

Put chilled mushrooms in the center. Sprinkle with cheese chips on top. Carefully lift the edges of the foil from both sides and connect the minced meat in the middle. Press down lightly so that the edges are joined and seized.

Wrap the roll in foil and place in an oven preheated to 180 ° C. Bake for half an hour. Then unfold the foil and leave in the oven until a delicious crust appears.

Recipe 2. Minced meat roll with mushrooms in the oven with spinach and olives

Ingredients

700 g of minced meat;

20 ml of sunflower oil;

200 g of champignons;

salt;

a bunch of fresh spinach;

freshly ground pepper;

two eggs;

120 g pitted olives;

2 onions;

50 g breadcrumbs.

Cooking method

Peel and chop the onion into small cubes. Sauté the vegetable in vegetable oil until tender, stirring occasionally. Peel the champignon caps from thin skin. Rinse the mushrooms, dry and cut into plates. Put the mushrooms in a pan, pepper, salt and fry until the liquid evaporates completely. Champignons must be browned.

Remove the olives from the marinade and cut into rings. Wash, dry and tear spinach with your hands. Transfer onion-mushroom frying in a bowl, cool and add spinach with olives. Shuffle.

Beat the chicken into the minced meat, add the breadcrumbs and the onion twisted through the meat grinder. Pepper, salt and knead, gently beating, until smooth. Place the minced meat on a sheet of foil in the shape of a rectangle. Make sure that the layer is the same thickness.

Put the filling in the middle. Using foil, roll the roll and wrap it in two layers of foil. Tighten the ends tightly. Put on a baking sheet and place in the oven. Bake for 45 minutes at 200 degrees. Carefully unwrap the foil to prevent burns. Lubricate the roll with a beaten egg and return to the oven until a delicious crust appears.

Ingredients

minced pork and beef - 600 g;

grated cheese - 150 g;

two boiled eggs;

sour cream - 50 g;

raw egg;

mushrooms - 200 g;

Cooking method

Beat an egg in minced meat. Pepper, salt and knead well, gently beating, until a viscous homogeneous mass is obtained.

Hard-boiled eggs. Cool them in cold water, peel and chop finely. Wash the mushrooms from dirt and sand. Peel and finely chop them. Fry the mushrooms in hot oil, stirring occasionally, until light brown.

Peel and finely chop the onion. Sauté the onions in a separate pan and add to the mushrooms. Cool the mixture. Cheese coarsely.

Ingredients

kg mixed minced meat;

ground black pepper;

six potatoes;

salted dill - 50 g;

half a stack. semolina;

canned mushrooms - 200 g;

salty seasoning.

Cooking method

Peel two potato tubers, wash and chop them on a fine grater. Add potatoes to the minced meat. Add finely chopped onion and semolina here. Knead thoroughly, gently beating the minced meat on a bowl.

Put the meat mixture on a baking sheet, and smooth with a wet palm until a rectangle of the same thickness is obtained.

Wash the four potatoes and boil them until soft. Cool the vegetable, peel off the thin skin and cut the tubers into four parts. Put the potatoes in the middle. Sprinkle salted dill on top. Form the roll with wet hands, covering the potatoes with minced meat. Place the pan in the oven and bake for 25 minutes. Bake at 180 degrees. Before serving, cut the roll into slices and serve with a side dish of rice.

Ingredients

Meatloaf:

350 g of chicken meat;

a bunch of green dill;

350 g pork fillet;

egg white;

two slices of bread;

two chicken eggs;

bulb;

salt;

two onions;

freshly ground pepper.

Mushroom filling:

400 g of champignons;

leek.

Cabbage Filling:

300 g of white cabbage;

freshly ground pepper;

leek;

salt;

four tomatoes;

60 ml of sunflower oil;

100 g Russian cheese.

Cooking method

Wash the pork and chicken. Cut the meat into slices and twist it in a meat grinder. Peel onions and garlic, chop in the same way as meat. Soak slices of bread in water and add to forcemeat. Drive two eggs here, pepper, salt and knead, beating well on a bowl.

Mushrooms clean, wash and cut into plates. Heat a little sunflower oil in a pan. Chop the onions finely. Fry the mushrooms in a pan until the liquid evaporates completely. Add leek and continue to pass until soft. Pepper and salt. Remove from the stove and cool.

Ingredients

For minced meat:

700 g of pork;

5 g ground black pepper;

bulb;

5 g of salt;

10 cloves of garlic.

Filling:

300 g of mushrooms;

5 g of ground black pepper;

150 g Cheddar cheese;

3 g of salt;

bulb;

1 pod of bell pepper;

50 g of sun-dried tomatoes;

100 g sour cream.

Cooking method

We start with the preparation of the filling. We chop the peeled onion as finely as possible. Fry it in sunflower oil, stirring regularly, until soft. My mushrooms, peel and cut into slices. Add the mushrooms to the onion, salt and continue cooking until the liquid evaporates. Season with pepper and remove from the stove.

We free the bell pepper pod from the stalk, peel it from the seeds and cut into thin strips.

We twist the peeled onions and garlic in a meat grinder along with the meat. Knead with hands, salt and pepper. Spread the minced meat with a thin layer on the cling film. Spread thin slices of cheese on top. On one edge, spread the filling and sun-dried tomatoes. We turn forcemeat into roll. Wrap it in foil and send to bake for 45 minutes at a temperature of 200 C. Remove the top layer of the foil, grease with sour cream and put in the oven for another quarter hour.

Minced meat must be kneaded for at least ten minutes to make the meat mixture viscous.

If you want to reduce the calorie content of the dish, do not fry the mushrooms, but boil them.

As a binder, you can use eggs, flour or starch.
